  • Select herbs and wash
    We use tarragon, oregano, chives, dill, fennel – either alone or in combination.
  • Slightly bruise the leaves – chop or leave whole
  • Choose a vinegar – organic apple cider, red wine, rice or distilled white
  • add a few drops of lemon juice
  • other additions: garlic cloves, peppercorns, mustard, celery or caraway seeds, chili peppers, small berries, edible flowers

Select and sterilize a glass bottle with cork. We use ones that have a ceramic and plastic cork.

Add herbs + other ingredients and then fill with vinegar of your choice. Let stand on a sunny windowsill for about 2 weeks, then test for flavor. You may wish to strain.

Makes a wonderful vinaigrette dressing or use in place of plain vinegar.

This is a quick, easy and delicious way to savor seasonal flavors. It’s also a great gift – especially with bright berries, edible flowers or chili peppers added.
